Try this indulgent chocolaty cocktail this Easter.


INGREDIENTS

·         Mint Chocolate Cream Liqueur (Baileys Mint Chocolate of Hotel Chocolat Mint Cream Liqueur)

·         Chocolate milk

·         Chocolate bunnies or eggs

·         Sprigs of mint leaves and edible flowers

·         Festive paper straws

DIRECTIONS

·         Dip a sharp knife in boiling water for 30 seconds

·         With your hot knife, cut the ears off of the chocolate bunnies/top off your Easter egg (keep dipping your knife in the boiling water as needed)

·         Eat the ears or top….you deserve it!

·         Fill bunnies/eggs with chilled mint chocolate cream liqueur and chocolate milk (just add chocolate milk for the kiddos)

Event Trends for 2021 !

You will no doubt remember 2020 as a year that has redefined ‘events’ forever, with the new safety concerns and the rise of virtual events. As a result, the landscape for events in 2021 has changed beyond recognition.

It is important more than ever that companies communicate and keep their brands alive with virtual and hybrid events. As event professionals, it is our job to provide creative input for virtual events and ensure the safety of all attendees to any live events, however large or small.

We can expect 2021 to be a year of change, rebuilding and redefining the events you hold.

We wanted to highlight you some event trends for 2021 edited by EventMB.

MICRO EXPERIENCES

As planning an event is redefined in 2021, the concept of planning large events in exotic locations will change dramatically. They will be possible, but not how the industry is used to planning them.

Therefore, a new breed of destination that helps to create a more contained experience will be provided. This will enable us to offer surprising and enticing experiences that cater to smaller groups of people. Despite being smaller, they will be more palatable and less risky than larger events, in large cities and large venues.

Smaller experiences will offer an unprecedented opportunity to be more exclusive and subsequently more intimate, fostering more meaningful connections between attendees.

SAFETY FIRST

Safety is paramount in terms of how attendees will evaluated whether to attend a live event or not. Therefore, the reputation of corporate brands hosting such events will be built upon effective health and safety:

- Social distancing at all times
- Mask wearing at all times
- Socially distanced seating
- Staged meal times
- Ventilation
- Sanitation and separation by plexiglass and other types of dividing materials
- The use of stewards to direct attendees and ensure compliance with safety rules at all times
- Onsite testing and event bubbles

All of our events will have these measures in place along with a system for tracking attendees and informing by spotless communication in the event of an outbreak during the event.

Testing is important not just onsite, but for multiple days before and after.

HYBRID IS THE FUTURE

According to EventMB’s latest research, 67 percent polled respondents agree that hybrid is the future of events, and 71 percent said that they would continue to employ a digital strategy even after live events return.

Things are quite different now and online will be the most prominent part for at least the next six months. In a climate of uncertainty, we need to focus on what we can control. We can control our new knowledge of virtual platforms, and we can start focusing on how we will continue to use them once live events are back in action.

With the end of the summer holidays looming, thoughts are turning to getting back in the office, coming together as a team and closing 2020 on a high.

Broken down into 4 sites, 1 hall and 3 cottages, this superb venue can cater for up to 22 pax comfortably. The space has plenty of communal entertainment areas, from a games room in the snug of the house to a pool table. Large dining facilities are available in all 4 sites, suitable for breakfast, lunch and dinner. 
Taking in the mesmerising surroundings the possibilities are endless for team building and bonding experiences. Take advantage of what the land has to offer with guided hikes over the hills, quad biking down the ravine or a gentle trot to the lakes by pony. There are blissful lake cruises to be had or energetic paint balling fun to try out, plenty for all.  


Cornwall

Enjoy the luxuries of this British coastal location, often mistaken for a sun kissed European destination. Enjoy the heated pool accompanied by drinks on the terrace, followed by dinner al fresco style. Tucked away on the popular Cornish coast, overlooking a picturesque harbour, this venue is able to accommodate 13 pax at single occupancy. DRINK UP - Homemade Rhubarb cordial

Homemade Rhubarb Cordial (Rhubarb Syrup) transforms sharp rhubarb into sweet & most refreshing drink. Simply dilute with either still or sparkling water to make delicious & thirst quenching beverage. Great in cocktails too!

This delicious Rhubarb Cordial is super easy to make and provides perfect drink solution on those hot days when just water simply won’t do as you are after that little bit of lovely flavour in your drink.

Ingredients

  • 300g golden caster sugar

  • zest and juice 1 orange

  • zest and juice 1 lemon

  • 450g rhubarb chopped

  • 1 slice fresh root ginger (optional), peeled

Method

  1. Put the sugar in a large saucepan with 300ml water. Bring to a simmer then add the zest and juice of both the orange and the lemon along with the rhubarb and the ginger.

  2. Cook the mixture over a medium heat until the rhubarb is falling apart.

  3. Pour the mixture through a sieve lined with muslin into a clean heatproof jug then transfer to sterilised bottles. Keeps in the fridge for up to 1 month.

  4. Serve approx. 25ml of cordial per 100ml sparkling water, or to taste.

This week, we are sharing this recipe for the mille-feuille, or Napoleon as it's also known, is a classic French pastry (tribute to our Frenchy : Berenice) which is readily available in Moroccan pastry shops. It's made by sandwiching crispy layers of puff pastry with a rich custard pastry cream filling and then garnishing the top with a glossy royal icing. The end result is a wonderfully appealing blend of flavors and textures—perfect for satisfying your sweet tooth at tea time or over coffee.

Ingredients

For the Pastry and Filling

  • 1 1/2 pounds frozen puff pastry (or 1/2 batch homemade pate feuilletée)

  • 3 cups pastry cream

  • Optional: 1/2 cup heavy cream (whipped to medium peaks)

    For the Royal Icing and Decoration

  • 3 ounces/80 grams bittersweet chocolate (melted)

  • 2 large egg whites (room-temperature)

  • 2 teaspoons lemon juice

  • 3 cups/350 grams confectioners' sugar

    Prepare the Pastry and Filling

  • Gather the ingredients.

  • Make homemade puff pastry dough and have it ready and chilled. Or thaw store-bought frozen puff pastry dough according to the package directions.

  • Make the pastry cream. Once completely cooled, you can lighten its texture if desired by folding in the optional whipped cream. Cover and refrigerate until assembly time.

    Bake the Pastry Layers

  • Heat the oven to 400 F/200 C.

  • On a lightly floured surface, gently roll out the puff pastry dough into an elongated rectangle the thickness of a thin piece of cardboard.

  • With a sharp knife, cut the dough into three equally-sized pieces.

  • Transfer the dough to a baking pan (or pans) lined with parchment paper and pierce the dough all over with a fork.

  • Cover the dough with another sheet of parchment paper and place a baking pan or pie weights on top to weigh down the dough as it bakes.

  • Bake the weighed-down dough, in batches if necessary, about 25 minutes, or until the dough is deep golden brown. The weights and the top layer of parchment paper pan can be removed the last 5 or so minutes of baking to help color the dough. 

  • Transfer the baked pastry layers to racks to cool completely.

    Assemble the Mille-Feuille

  • Gather the ingredients.

  • Set out and have everything ready—the baked puff pastry layers, the pastry cream, and the ingredients for frosting and decorating. Don't worry if your baked pastry layers look unevenly sized. After assembly, you'll be trimming the edges for a uniform look.

  • Start by distributing half of the pastry cream over one layer of baked puff pastry.

  • Top with another layer of dough, pressing gently to adhere it to the pastry cream below.

  • Spread the remaining pastry cream over the second layer of pastry and top with the third layer of pastry and again press down gently. 

    Decorate the Mille-Feuille

  • Melt the chocolate in a saucepan over very low heat and transfer it to a pastry bag or decorating tube fitted with a fine round tip. Alternatively, you can use a small plastic bag which has a corner pierced or snipped to make a tiny opening.

  • Make the royal icing by beating the egg whites and lemon juice just until foamy. Add most of the confectioners' sugar and mix on low speed until very smooth and glossy.

  • Add more confectioners' sugar if necessary to achieve a consistency so that when the icing is drizzled back into the bowl from the beaters, it will sit briefly on the surface of the icing before sinking back in.

  • Immediately pour the royal icing over the top layer of pastry and spread it evenly over the entire surface. Don't worry if some of the icing drips over the edges.

  • Next, working quickly before the icing sets, drizzle the chocolate across the icing in evenly-spaced, parallel lines. Again, don't worry if some of the chocolate drips over the edges, and don't worry if your lines look sloppy. The next step will improve their appearance.

  • With the tip of a thin, sharp knife, lightly drag it through the lines of chocolate spaced evenly from one side of the pastry to the other first in one direction, and then in the opposite direction to make a chevron pattern. This creates the classic decorative pattern shown in the photo.

  • Serving the Mille-Feuille

  • With a long, sharp knife, cut 1/4-inch off the edges of the pastry all around to make a neat, evenly proportioned rectangle.

  • Carefully transfer the trimmed mille-feuille to a serving dish and refrigerate. Allow an hour or two to chill before cutting into individual portions for serving.

  • Slice, serve, and enjoy!

    Tips

  • Please do not confuse frozen puff pastry dough with phyllo dough. The two are not interchangeable in this recipe. Always select all-butter puff pastry for the best flavor and texture.When assembling the mille-feuille, it's best to work on a flat surface for easy transfer of the finished pastry to a serving dish. When cutting the mille-feuille, a long, non-serrated knife will make the cleanest cut through the icing.

Mexican milk cake recipe

This week, we are missing cake we often get to enjoy whilst in the office, lovingly handmade by our MD, Julie. She has shared her favourite recipe for an easy at home task with a yummy result to enjoy – no arguments over who gets to lick the bowl though!

PREP: 30 MINS
COOK: 40 MINS - 45 MINS plus cooling

Ingredient Checklist
Flavourless oil, for the tin
4 eggs, separated
200g caster sugar
1 tsp vanilla extract
200g plain flour
1 tsp baking powder
100ml milk
410g can evaporated milk
200ml sweetened condensed milk
300ml double cream
2 tbsp icing sugar
pinch cinnamon

Instructions Checklist
1. Heat oven to 180C/160C fan/gas 4. Lightly oil and line the base and sides of a 20cm square cake tin.

2. Put the egg whites in a large bowl with a pinch of salt. Beat with an electric hand whisk until foamy, about 3 mins. Keep mixing while you add 150g of the sugar, a spoonful at a time, until thick and glossy. 

3. In another bowl, mix the egg yolks, remaining sugar and vanilla (no need to clean the beaters first) for 2 mins, or until pale and foamy. Add the flour, baking powder and milk to the egg yolks, and use a spatula to fold everything together.

4. Add a large spoonful of egg white to the cake mix, beat together to loosen the mixture, then gently fold through the remaining egg whites with a large metal spoon (being careful not to over-stir so you don’t knock out too much air), until you have a smooth batter. 

5. Pour into the tin, smooth the top and bake for 40-45 mins until a skewer inserted into the centre comes out clean. Mix together the evaporated milk, condensed milk and 3 tbsp of the cream. 

6.Leave the cake to cool for 10 mins in the tin, then ease a knife around the sides. Poke holes over the surface with a skewer, then pour over half the milk mixture. After 5 mins or so, most of it should have soaked into the cake. Leave for another 5 mins, then transfer to a plate and pour over some of the remaining milk until it starts to leak a little. (Any leftover milk that won’t soak into the cake can be served on the side) Leave to cool. 

7.Whip the remaining cream and icing sugar together until holding soft peaks. Spread the cream over the cake and sprinkle with a little cinnamon. Can be made and chilled a day ahead. Serve in squares with any remaining soaking milk.
